So… tomorrow is National Pina Colada Day and in celebration, I’ve created this tasty healthy spin on a classic.
Dare I say that this was my breakfast?
Of course, it was a virgin one. I don’t drink and am recording my next 21 videos for my YouTube channel today so I’ve got to be on point!

Pina Colada the Healthy Way
Ingredients:
- 1/4 cup fresh pineapple, chopped
- 2/3 cup coconut milk, canned full-fat
- 1 tsp ground golden flaxseed
- 1 tsp vanilla extract
- 1/4 tsp coconut extract
- 1 pinch of celtic salt
- 1 tbsp collagen
- 6+ drops of liquid stevia (to your liking)
- 1 cup ice cubes
Instructions:
- Add all the ingredients to your favorite blender, mine is the VitaMix and blend until well mixed.
- Feel free to add more ice to get the desired thickness you’re after. You can do the same with the stevia to get the desired sweetness.
- Serve in your favorite cocktail glass and garnish with a slice of pineapple.
As I mentioned, I don’t drink so I kept my pina colada virgin. However, if you’d love for this to be an adult beverage, add your favorite rum prior to blending.
