Have you ever tried to cut out the bad carbs from your diet? It’s not as easy as any of us would like it to be, wouldn’t you think?

When I first had to cut gluten out of my diet because I was sensitive to it, my mom and I spent HOURS at the grocery store trying to figure out what I was going to eat, especially with being an athlete.

This was back when “gluten-free” wasn’t even a thing!

I’ve been at this since 1994 and can tell you, it gets much easier with time and truly is more satisfying.

That’s not to say that I never miss some of the classics like pizza.

It was a staple growing up and what college student didn’t consume massive amounts of it?

Thankfully, people have gotten super creative over time and new innovations in the culinary world have emerged.

I give you, the Meatzza! It’s a new favorite in our household!

Low Carb Meatzza

” Crust” Ingredients:

  • 1 lb bulk sausage
  • 1 lb ground turkey
  • 1/3 almond flour
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp celtic salt
  • 1/2 tsp fresh ground black pepper
  • 1/2 tsp crushed red pepper (optional)

Toppings:

  • 1/2 cup marinara sauce (no sugar added)
  • 2 cups shredded low-moisture mozzarella cheese
  • 15 slices pepperoni
  • 1/2 cup spinach
  • 5 fresh basil leaves, torn

Directions:

  1. Preheat the oven to 400 degrees F. Line a rimmed baking sheet with unbleached parchment paper.
  2. Add all of the crust ingredients to a large mixing bowl to combine. Hands work best for this.
  3. Place the meat mixture onto the lined baking sheet and press down the mixture so that it’s an even thickness across the pan.
  4. Bake for 15 minutes, until the meat is cooked through. Remove from the oven and drain off any excess fat from the pan and pat the meat with a paper towel to absorb the excess grease.
  5. Top the meat evenly with marinara, then mozzarella and then the rest of the toppings.
  6. Place the pizza under the broiler on high for an additional 5-6 minutes, until the cheese has melted and is cooked the way you like it.
  7. Using a pizza cutter, cut into 10 even pieces.
