Raise your hand if “Milk’s Favorite Cookie” is your favorite ?♀️?♀️?♀️ I really love Oreos and could eat them every week crunched up in homemade vanilla ice cream! That crunchy cookie with the creamy filling is a family favorite here.
However, I don’t eat grains and we rarely have sugar so how on earth are we going to celebrate this National holiday??? By creating a keto Oreo Chaffle, that’s how!
I wanted to share with you our latest creation that has my kid begging for more! Even my brother (he won’t just eat anything) thinks they’re a tasty treat!
These delectables take about 10 minutes hands-on time, 20 minutes overall time.
Ingredients (makes 2 chaffle sandwiches)
Ingredients:
Chaffles:
- 1 large egg
- 1 large egg white
- 2 tbsp cream cheese
- ½ cup grated mozzarella
- 2 tbsp black cocoa powder (gives the coloring) or use raw cacao powder like I did because it’s what I already had on hand
- 2 tbsp coconut flour
- 4 tbsp granulated monk fruit
- ½ tsp gluten-free baking powder
Filling:
- ¾ cup mascarpone cheese, room temperature
- ½ tsp vanilla extract
- 2 tbsp powdered monk fruit or swerve
- 2 tbsp organic heavy whipping cream
Instructions:
- Preheat your mini waffle maker.
- Using a blender or a mixer, combine the whole egg, egg white, mozzarella and cream cheese. Mix until smooth and then add in the dry ingredients, minus the monk fruit, and mix again. Finally, stir in the monk fruit.
- Cook each waffle in your mini waffle maker for about 3 minutes.
Open waffle maker and let the chaffle cool for ~15 seconds before removing it from the maker. Repeat until you’ve used up your dough. You should have 4 chaffles. - While the chaffles are cooling down, place the mascarpone and vanilla extract in a bowl and mix together until fully mixed and softened (~2 minutes).
- Add the powdered sweetener and heavy cream one tablespoon at time alternating each until you have added all of them.
- Spoon and smooth the filling on top of one chaffle and then top with another chaffle to complete your chaffle sandwish.
- You can store the separate components in the fridge for up to 3 days but I doubt they’ll last that long! For longer storage, you can freeze the chaffles (with or without filling) for up to 3 months. If you freeze them with the filling, you now have an “ice cream” sandwich chaffle! So good!!
