When you’re told you shouldn’t be eating gluten-containing foods, do you have to say goodbye to all the classic comfort foods?

Thankfully, the answer is ‘no’.

I was told way back when I was 15 that I had a sensitivity to gluten. You guys, this was in 1994, long before “gluten-free” was even a thing.

In fact, I was sensitive to most all grains. It was life-altering to say the least.

I remember my mom and I spending hours at the grocery store trying to figure out what on earth I could eat.

It was overwhelming and frustrating until we got the hang of it.

I can honestly say, I have not had pasta since and prior, we used to have angel hair pasta most nights since that’s how you carb-loaded when you were an athlete back in the day.

What’s most interesting to me is when you replace grain-based pastas with veggies, the meal is far more satisfying.

I used to wonder why that was until I learned somewhere along the way where satisfaction actually comes from.

When your body receives all of the nutrients it needs to operate, you’re satisfied.

Have you ever had a meal only to feel hungry moments later and wonder how on earth could you still be hungry?

Satisfaction doesn’t really come from calories alone. It comes from feeding the body the nutrients it requires to function.

So what on earth have I been eating since high school that still allows enjoyment of classics like spaghetti?

Spiralized veggies!!! So nutritious and delicious!

Oh! And we’ve been food snobs ever since. This spaghetti sauce recipe was shared with us from one of our dear patients.

Once you make your own with fresh ingredients, you’ll never go back to store bought sauce again! Enjoy!

Spaghetti with a Twist

Ingredients:

  • 2 lbs grass-fed beef
  • 1 lb italian style ground sausage
  • 1 medium yellow onion, chopped
  • 2 quarts whole tomatoes (we can our own and WOW!)
  • Fresh oregano, basil and flat leaf parsley to taste
  • Salt and pepper to taste
  • 3 large zucchini, spiralized (you could also swap with spaghetti squash)

Directions:

  1. Place meat in a sauce pan and brown. Remove oil and return to stove.
  2. Add in chopped onion and continue to brown until onion is transparent and some meat is getting a little crispy.
  3. Add whole tomatoes, fresh herbs and salt and pepper and bring to a simmer.
  4. Continue to simmer until sauce has reduced to consistently you’d like. I like mine simmer for hours at times. It makes the house smell amazing!
  5. When ready to eat, lightly sauté the zucchini in avocado oil or grass-fed butter.
  6. Plate your zucchini and top with this delish sauce!
  7. Garnish with a little parmesan cheese and more herbs if you like.
