Do you find it difficult to eat healthy on the regular because it’s just so time consuming?

I completely can relate and sometimes I just would rather spend my time doing something else with my son.

However, I am a total food snob and can really tell a difference in how I look and feel and how my son behaves when we don’t eat clean.

I stumbled across this Chicken Divan recipe one weekend and just had to see what the crew would think. 

It was easy peasy and took next to no time to throw it together.

Better yet, it was approved by all!

Chicken Divan

Ingredients:

  • 3 lbs rotisserie chicken, cubed or shredded
  • 3 lbs shredded sharp cheddar cheese
  • 2 cups avocado oil mayo
  • 2 lbs frozen broccoli
  • 1 cup chopped onion

Directions:

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix all of the ingredients, except for 1 pound of shredded cheddar cheese.
  3. Place the mixture in a large glass baking dish.
  4. Sprinkle the remaining cheese on top.
  5. Bake for 60 minutes or until the topping on the cheese bubbles.
  6. Remove from the oven and let stand for 15 minutes before serving.

Serves 12
